Has anyone launched from Ballylongford, Co Kerry? is it very tidal? i.e., if the time isn't right will I be either stuck on the trailer or in mud? Fishing out the estuary is the plan.

Should be! Fenit is as far as I have strayed in that direction, do they not launch from the ferry slip at Tarbert?
This map is handy for checking out the shoreline, Ballylongford doesn't look promising to launch from looking at that (select 2005 map for best viewing)
